** The shrimp is loaded into a sorting machine that will sort large shrimp from small shrimp. The small shrimp is then stored in a fish hold and is delivered to the factory onshore for boiling, while the large shrimp goes directly from the sorting machine to the boiler onboard for boiling.
After the large shrimp have been boiled, the large shrimp goes thru cold water and directly to a fish hold for packaging with ice.
